Here’s a ‘don’t-have-time-to-make-a-starter’ recipe, with just three ingredients you can pick up at the supermarket.
I made my own salsa from skinned tomatoes, red onion, black olives, capers and garlic, all chopped very finely, then a splash of white wine vinegar and extra virgin olive oil, finished with some fresh parsley and coriander. But there’s some lovely supermarket salsas around so don’t feel guilty about using one! The feta is simply crumbled over the top, (please check it is vegetarian – some aren’t).
