It’s Cheese Sandwich Week here at The Veg Space!  I’m taking part in the #BetterWithLeerdammer challenge in conjunction with Leerdammer.  This tasty cheese is extremely versatile and can be used in all sort of simple but delicious sandwiches, so I’ll be sharing my top 5 favourite cheese sandwich ideas every day this week.  (I hope regular readers don’t feel too bombarded with daily posts – normal service will resume next week, I promise!).

Day 1 uses Leerdammer Original in this juicy New York Bagel – a chewy sesame seed bagel filled with creamy smashed avocado and peppery rocket, topped with a soft-yolk poached egg.

Serves: 1 bagel
Ingredients
  • 1 sesame seed bagel
  • 1 tbsp mayonnaise
  • 1 tsp wholegrain mustard
  • 1 slice Leerdammer Original cheese
  • half an avocado
  • handful fresh rocket
  • 1 free range egg
Instructions
  1. Slice the bagel in half and toast. Mix together the mayonnaise and mustard and slather over the bottom half of the bagel. Top with the slice of cheese.
  2. Mash the avocado with a fork and season with salt and pepper. Add to the bagel and follow with the rocket.
  3. Crack the egg into a bowl or mug and add a drop or two of vinegar to the white. Bring a saucepan of water to the boil, then whisk to create a whirlpool. Pour the egg in to the centre of the whirlpool and lower the heat, then cook for 3 minutes. Remove with a slotted spoon, drain on kitchen paper and add to the bagel.
  4. Serve immediately!

  4. Gosh Kate, what a perfect photograph. It’s so hard to get a perfect poached egg, never mind take a photograph of it. I love egg and avocado together and cheese and avocado together, but I’m not sure I’ve had all three. I’ve sort of 99.99% certain that I would love it though.
