20 Min Meals | Vegetarian & VeganThis simple pasta dish is a winner – bright, fresh, lemony pesto with a hazelnut crunch.  Pasta with pesto can be a little dry and cloying, but this one is thinned with water for a more sauce-y consistency, (rather than gallons of olive oil, which would taste amazing but take its toll on your arteries!).

Recipe: ‘Make & Freeze’ Roasted Squash & Creamy Pesto Lasagne (Vegan)

Roasted Squash & Creamy Pesto Vegan Lasagne

I’ve lamented in previous posts that lasagne can be a bit of a faff to make, and whilst it is one of my top five all-time-favourite meals, I can’t always muster up the energy to make it.  But now and again I have a burst of enthusiasm and make a batch of individual lasagne for the freezer, ready to pop in the oven when I haven’t got the time or inclination to cook.

Here’s a recipe for just that sort of lasagne – this Roasted Squash & Creamy Pesto Lasagne freezes really well, and is a fun cooking project for a rainy Saturday afternoon, making you 8 individual dinners for cold winter nights to come.  Layers of sweet roasted butternut squash, a creamy (and vegan) pesto béchamel, and roasted cherry tomatoes pack this with flavour between the sheets, and a breadcrumb and pine nut topping give it a lovely crunchy top without the need for cheese.

Hello again! Its been quite a while since my last post, apologies – but its for a very exciting reason that I can’t share with you just yet, (but will spill the beans soon, I promise).

What a lovely, sunny summer it has been, (though I type in the middle of a thunderstorm and torrential rain!).  All that sunshine has infused home-grown tomatoes with the sweetest of flavours this year, reminding us what tomatoes are supposed to taste like, (rather than the plastic-wrapped excuses for tomatoes we buy in supermarkets in December).

I’m not sure I’ve met anyone who doesn’t like lasagne, but let’s face it – it can be a bit of a chore to make.  Two pots bubbling on the stove, one with a creamy béchamel and the other with a rich, tomato-ey ragù, then all that layering, breaking the lasagne sheets into the right shape, then baking.  It is absolutely always worth the wait, but sometimes I just can’t quite find the motivation.

Veggie Sausage & Sun Dried Tomato One Pot Pasta

20 Min Meals | Vegetarian & VeganOne Pot Pasta dishes are terribly trendy at the moment… and with good reason.  Ever so simple, with no draining required – the pasta and sauce cook themselves in the same pot, with the pasta soaking up all the lovely flavours as it cooks, and its starch helping to thicken the silky sauce.

Most one-pot-pasta recipes involve simply chucking everything into the pot at once and leaving it to its own devices, and you could do that here if you wanted, but I prefer to brown off the veggie sausages first, (or they end up a bit pale and flabby), and also to cook off the onions so they turn really sweet and release their juices before adding everything else.

Veganuary-heartThis is my last Veganuary post as the month draws to a close, (though there will be lots more vegan recipes coming up, don’t fear!), and I thought I would share one of my very favourite “but surely that can’t be vegan” meals, my super-duper vegan lasagne.

The big surprise is the intensely creamy, velvety, even (dare I say) “cheesy” sauce layer, for which the recipe is below.  For the other tomato-ey ‘mince’ layers I used a batch of my Slow-Cooked Borlotti Bean Chilli from the freezer, bulked out with some soya mince and extra veg to make it stretch a bit further.   Continue reading “Recipe: Creamy Vegan Lasagne Sauce”

20 Min Meals | Vegetarian & VeganCavolo Nero (or ‘black kale’) is a wonderful vegetable that I don’t use often enough.  It has the deep, mineral-y sweetness of kale, and a lovely bobbly texture.  You can cook it in all sorts of ways – boiled, steamed, stir-fried, even roasted, but I’ve included my favourite with the pasta dish below: quickly blanched in boiling water then sautéed in a little olive oil.  This retains some of the bite, but also it’s deep green colour, (and therefore probably lots of lovely vitamins and minerals too).

At last…. I can finally tell you about my latest kitchen gadget that I’m a little bit in love with… my new blender!  Until now, I really didn’t see the point in having a stand-alone blender, thinking my stick-blender and mini-chopper surely did an equivalent job.   Errrr… no.  This is blending on a whole new level – the power of my new Froothie Optimum 9200A is quite incredible, and so far everything I’ve tried making in it, (soups, smoothies, sauces, pestos, cocktails and slushies, mousses and hummus) are just so ultra-smooth and creamy, a world away from my puny little mini-chopper.  I’m now, (as you may have guessed), a total high-speed-blender bore convert.   Continue reading “Recipe: Broccoli & Walnut Pesto (and Pasta alla Genovese)”
