Remove stalks and hulls from the strawberries and cut each in half (or quarter if they are large).
Place the strawberries in a saucepan with the maple syrup and juice and zest of the lemon.
Simmer for 8-10 minutes until the strawberries have completely collapsed.
Use a hand blender to blitz to a smooth sauce, or pour into a blender or food processor.
For an extra-smooth coulis, pass through a fine sieve.

You can use many different fruits instead of or in combination with strawberries if you prefer - blueberries, cherries, blackberries or raspberries all work well, either fresh or frozen. Taste and adjust the sweetness as needed.If the coulis is a little runny when you have blitzed it, return it to the pan and simmer for another minute or two to thicken it up. You can add more lemon juice if it is too thick.
