A drizzle of thick and fruity strawberry coulis adds a delicious finishing touch to many desserts and breakfast dishes. This quick and easy 3-ingredient recipe uses maple syrup instead of sugar, and lemon to add a citrus zing.
Coulis is delicious poured over ice cream, cheesecakes, sponge puddings or aquafaba meringues. Or for breakfast it is a yummy addition to waffles, pancakes or swirled through porridge.

Ingredients
Strawberries You can use either fresh or frozen strawberries for this coulis. It is ideal for using up those that are a few days old and not quite at their best any more!
Maple Syrup is a lovely sweetener to use instead of sugar. You can add a little more or less depending on how sweet you need your coulis to be.
Lemon adds a citrus kick to the strawberry - you can use orange instead if you prefer.

Remove stalks from the strawberries and cut into half (or quarter if large). Put into a saucepan with maple syrup and lemon juice and zest.
Simmer for 8-10 minutes until the strawberries have completely collapsed. Use a hand blender to blitz to a smooth sauce. For an extra-smooth coulis, pass through a fine sieve.
🔪 Top Tips & FAQs
You can use many different fruits instead of or in combination with strawberries if you prefer - blueberries, cherries, blackberries or raspberries all work well, either fresh or frozen. Taste and adjust the sweetness as needed.
If the coulis is a little runny when you have blitzed it, return it to the pan and simmer for another minute or two to thicken it up. You can add more lemon juice if it is too thick.
In an airtight jar or bottle in the fridge, the coulis will keep for 2-3 days.
Yes, this freezes well - you can use an ice cube tray to freeze small, individual portions.

Quick Strawberry Coulis with maple syrup
Ingredients
- 400 g fresh strawberries or frozen
- 80 ml maple syrup
- 1 lemon
Instructions
- Remove stalks and hulls from the strawberries and cut each in half (or quarter if they are large).
- Place the strawberries in a saucepan with the maple syrup and juice and zest of the lemon.
- Simmer for 8-10 minutes until the strawberries have completely collapsed.
- Use a hand blender to blitz to a smooth sauce, or pour into a blender or food processor.
- For an extra-smooth coulis, pass through a fine sieve.
