This simple rocket salad with lemon and pine nuts is such an easy side salad. Just four ingredients and a minute to make, with a citrus zing and nutty crunch.
To make the dressing, mix the olive oil with the juice and zest of the lemon in a small bowl. Season to your taste with salt and black pepper.
Tip the rocket and pine nuts into a large bowl then pour in the dressing. Toss until all the leaves are fully coated, then serve.

Add the dressing right at the last minute to prevent the rocket leaves from wilting or becoming soggy before serving.If you don't have a lemon to hand, you could make the dressing with 2tsp balsamic or white wine vinegar instead, for a simple vinaigrette.
